NOODLES SUPER SALAD


INGREDIENTS

  1. 250 gm rice noodles
  2. 1 cup frozen edamame beans
  3. 1 tbsp. sesame seeds
  4. 1 bunch green onions
  5. 1 small size of ginger
  6. 1 medium broccoli
  7. 1 tbsp. sesame oil
  8. 1 tbsp. low salt soy sauce
  9. 1 cup frozen peas
  10. 1  red chili
  11. 3 limes
  12. 4 tbsp. olive oil
  13. 1 tbsp. brown sugar
WHAT TO DO?

  1. Bring a pan of water for the boil. Cut the broccoli into florets and put to the boiling water for 3 min.
  2. Add the peas and edamame beans to the water, bring back to boil, then rinse, drain and refresh under cold water.
  3. Toast the sesame seeds in a dry frying pan over a low heat. finely slice the green onions.
  4. To make the dressing, peel and then chop the ginger, then seed and then slice the chili. Keep into a jar with a tight fitting lid.
  5. Then grate in the zest from 1 lime, squeeze in about 5 tbsp. of lime juice, finally add the remaining dressing ingredients. Shake them well.
  6. Mix the noodles, green vegetables and green onions, finally mix in the dressing, chopped mint and toasted sesame seeds.
